Wait, how did Carna convert me from pescatarian back to carnivore without my knowledge? I am sorry, did this restaurant just bring a selection of steak knives to the table for our choosing? Dario, how do you pull off that Italian chef outfit?

Carna by Dario Cecchini at SLS Baha Mar in Nassau Bahamas made Elliott and I hungry for more than just the opportunity to produce with sbe again. It was a chance to witness what seemed to be the greatest 10-course meal ever consumed.

Why is it every time we sojourn to Bahamas there is always an abundance of everything? Food. Pools. Yachts. I am not even sure if I spelled that correctly; it is so beyond me. How does a boy from the other side of the tracks make sense of affluence?



Dario is a pioneer in the restaurant industry. His approach to meat is that

of an art form. Respect the death of an animal. Eat everything, waste nothing.



Solociccia, Dario’s restaurant, in Panzano Italy is known for serving all

parts of the cow, from muzzle to the tail. Rosemary up the bum, anyone?



Dario attended university in Tuscany for veterinary science, a field that

saves animals. He decided to take on the family business 3 years later.



Today, many restaurants around the world have expanded their menus to

include unconventional cuts of meat as a result of Dario Cecchini’s practice.

I Got The Horses In The Back

Hello from cloudy San Francisco. Amanda, Ashlyn, Elliott, Oro. I see you. Droning the city from Bay Bridge to Buena Vista Park. Woww, it feels strange to not hear a car honk every three seconds. Or to watch people stand at crosswalks like mummies.

Do I understand correctly that everyone and everything moves slower where ever there is a beach? The topic comes up quite often on our trips. My opinion: Bahamas, worm. Miami, turtle. San Francisco, snail. See what I did there? That means slow pace.

Something about the laid-back mentality that seems to always associate with coastal, tropical cities. Yes, that certainly excludes New York. To be clear, I am still in the summer vibes from Series 50, but living like a koala bear feels depressing. See what I did there, again?
